Quinoa Salad Recipe

This quinoa salad is perfect for lunches of dinners and can be prepared ahead of time for convience!

Ingredients:

  • 1 cup of cooked quinoa
  • 1/4 cup of extra-virgin olive oil
  • one lime juiced
  • 1 cup of halved cherry tomatoes
  • 1 cup of black beans
  • 1/4 cup of arugula 
  • salt and pepper to taste

  • Mix the quinoa, olive oil, lime juice, black beans, and a little salt and pepper into a bowl

  • Now add in the tomatoes and arugula and mix

  • Enjoy!
